Becaus this recipe takes an hour to make, I recommend making a large batch at the beginning of the week and reheating each morning or making breakfast jars with a little bit of fruit in the top, ready to grab and go!
- 1/2 cup raw quinoa
- 1 large apple, peeled and diced
- 1/3 cup raisins (optional)
- 1 2/3 cup water
- 1/4 tsp pure vanilla extract
- 3 tbs coconut butter
- 1/2 tsp cinnamon
- Unsweetened coconut milk (optional)
- Seeds (optional)
In a small pot, bring water to a boil before simmering on low. Add quinoa, apple, salt, and raisins. Cover and simmer for 40 minutes. Turn off heat and let sit covered for and additional 20 minutes. If too thin, bring back to a boil and stir until fluffy. Stir in cinnamon, vanilla, seeds, coconut butter, and coconut milk to taste.
